Today's Recipe


No Bake Brownies

They heat on the cook top just long enough to melt the chocolate. But that's it- there's no need to heat up the kitchen with the oven!

Makes: 3 dozen brownies

  • 2 cups (12 ounces) semisweet chocolate chips
  • 1 cup plus 2 teaspoons, evaporated milk, divided
  • 1 (11-ounce) package vanilla wafers
  • 2 cups miniature marshmallows
  • 1 cup chopped pecans
  • 1 cup sifted powdered sugar

  1. Combine chocolate chips and 1 cup evaporated milk in a large heavy saucepan; cook over low heat until chocolate melts, stirring occasionally. Set aside.
     
  2. Process vanilla wafers, in 2 batches, in a food processor to make coarse crumbs. Place crumbs in a large bowl.
     
  3. Stir marshmallows, pecans, and powdered sugar into crumbs. Reserve 1/2 cup chocolate mixture. Stir remaining chocolate mixture into crumb mixture. Press mixture into a well-greased 9- x 13-inch square pan.
     
  4. Combine reserved 1/2 cup chocolate mixture and 2 teaspoons evaporated milk in a small bowl; spread over crumb mixture. Cover and chill at least 1 hour. Cut into squares.

Quite a few of you asked me to keep you updated on my volunteer work.

Yesterday was my first day on my own and it went well. Beginning to

feel like I fit in and can be a real help from now on - going to love doing

this - I am finding there is a great group of people waiting to work

with every time I volunteer. I am thankful this opportunity is with me.

It is to be near 80 today with plenty of sunshine. This ole gal will be

getting her beee-hind up out of this chair and going outside and for a

long bike ride -- and much needed yard work.

Here is hoping you all have a great day. Please join
