Spray 2 quart casserole with nonstick cooking spray. In a small skillet, melt butter. Add green pepper and onion; saute until crisp tender. In a large bowl, combine cream style corn, whole kernel corn, eggs and corn muffin mix; blend well. Add onion mixture; mix well. Pour into casserole; sprinkle with cheddar cheese on top. Bake at 350 degrees for 55 - 65 minutes or until firm and set. Let stand 5 minutes before serving.
The Skinny: You could use egg substitute with no change in taste

One half cup butter
One third cup onion

One third cup green pepper
1 (17 ounce) can cream style corn
1 (17 ounce) can whole kernel corn, undrained

Well, here we are - a brand new year. I do hope everyone had
a good new years. Mine was really nice and I had one of the
best birthday's ever. Thank you for the many wishes!
I have not made many changes for now. My pages will
remain as is - but I will be making a few changes as time
goes by. Nothing taken away, I only will be adding things. I
have so much to share. So don't go away, the
best is yet to be!
I want to thank you all for the new year wishes, there were
many - and it took me a while to get thru all of them, but
I did - each and every one!
Now, here is wishing you a good day - hope it is filled
with nice moments - as for me I will be watching our
Ohio State Buckeyes in the Gator Bowl. It has been such
a difficult year - and next year will be a recovery as well, but
we have a new coach - and there is no where now to go
except forward. So, GO BUCKEYES!
