Creamy Cucumber Salad
I am saving this one
for Summer!
Serves: 8
Preparation Time: 15 min
- 3 large cucumbers
- 1 small onion, grated (about 1/2 cup)
- 2 cups plain yogurt
- 1/2 teaspoon garlic powder
- 1 tablespoon dried mint leaves (see Option)
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- Peel cucumbers and slice in half lengthwise. Scoop out seeds and coarsely chop cucumbers; place in a large bowl.
- Add remaining ingredients to cucumbers; mix well. Serve immediately, or cover and chill until ready to use.
Option
When fresh mint is available, go ahead and use it. Coarsely chop 2 tablespoons fresh mint leaves and use it in place of dried mint.Food For Thought

Sure hope everyone had a good Easter. It was very different
not having Dad around the dinner table, and he was missed,
so our Easter was not the same. We went to visit him
after the meal and he was glad to see us.
