My Picks For Today

 I begin my picks today with the following images because my heart is broken as thousands upon thousands are by the loss of very young and  innocent children and very brave teachers in reference to the Sandy Hook Elementary school shootings. May the parents know our thoughts and prayers go out to them during what must be the most difficult of difficult times in their lives. I could not do a page today without thought of this awful tragedy ... the following pictures I dedicate to their loss which is just totally beyond belief.

Recipe Corner

Ingredients

  • Nonstick cooking spray
  • 1 pound white chocolate, chopped (do not use chips)
  • 2 cups puffed rice cereal
  • 1 bag (7 1/2 ounces) hard peppermint candies, unwrapped

Directions

  1. Spray a 10-by-15-inch rimmed baking sheet with nonstick cooking spray; line with a piece of waxed paper. Crush candies (see below).

  2. Place white chocolate in a heatproof bowl set over (not in) a saucepan of simmering water. Heat, stirring occasionally, until smooth, 4 to 6 minutes. Remove from heat; stir in rice cereal.

  3. Transfer mixture to prepared pan; with a spatula, spread to edges of pan.

  4. Sprinkle with crushed candy; with a piece of waxed paper covering the entire surface, press in gently (paper prevents hands from sticking to candy and chocolate). Chill until firm, 20 to 30 minutes (no longer, as candy will begin to soften).

  5. Peel waxed paper off. Break bark into 2-inch pieces.

Cook's Note

To crush candies: Place candy in a doubled resealable plastic bag (one inside the other); seal and wrap in a kitchen towel (to prevent candy from piercing the bag). Use a rolling pin or skillet to crush candy into tiny pieces. Pass through a large sieve to separate crushed candy from fine powder. (Save powder to stir into hot chocolate or sprinkle on ice cream.)

Here is hoping everyone had a good weekend.

So sorry I did not get a page out on Friday. Life
got crazy and time got away from me and there was
no time left to put a page together. But as promised,
I did do the "Little Drummer Boy" for you.

For those interested, my Dad was discharged from
the rehab facility and now is home to hopefully
continue his progress forward. Continued prayers
always appreciated as he does have yet another
difficult road ahead of him with learning to use his
new prosthetic leg ...

Do join me all week as Christmas will be celebrated on
my pages ..... please do remember to be safe in
always being aware of everything and everyone
around you.
